Oven Roasted Asparagus

Spring is in the air! One of my most favourite spring foods is roasted asparagus. Here in the Okanagan I love when the local Armstrong asparagus starts popping up in the local veggie markets. Our family’s favourite way to enjoy this spring time veg is roasted.

Preheat oven to 350F

1) Break off tough end of the asparagus shoots. I like to snap them wherever they naturally break to ensure all the toughness has been removed.

2) Spread them in a single layer on a sheet pan. I like to use stoneware. Drizzle with olive oil or avocado oil.

3) Broadcast season with salt and pepper and a little garlic.

4) Pop into the over for 15-20 min or until slightly golden.

5) ENJOY!!
